Zucchini/cucumber Salad/Sauce 

1 medium zucchini or cucumber, trimmed and cut into ½ inch cubes

¾ c. crumbled feta cheese (bleu cheese may be used)

3 T. extra-virgin olive oil

2 T. small dill sprigs

Thin strips lemon zest

1 T. + 1 tsp. fresh lemon juice 

Toss together zucchini/cucumber, cheese, oil, dill and lemon juice. Season with salt and pepper. Sprinkle with lemon zest.

Use as side dish or condiment for sandwiches.
