Apricot Cornmeal and Sage Cookies 

1 stick unsalted butter well softened
¾ cup sugar
1 large egg
¾ cup plus 2 tablespoons all-purpose flour
½ tsp baking soda
¼ to ½ cup dried apricots finely chopped
2 to 3 Tbl.finely chopped sage leaves
½ cup cornmeal finely ground (I use the blender)
½ tsp salt 

Preheat oven to 350 F 

Cover 2 baking sheets with parchment paper or very lightly grease.  In a large bowl whisk together the butter, sugar and egg until smooth.  Sift in flour and baking soda then add apricots sage, cornmeal and salt.  Stir until well combined.  Drop 1 T.of dough about 2 inches apart on to baking sheet.  Bake in middle of oven 10 minutes or until golden brown.
