   BUTTERMILK COFFEECAKE

2 ½ Cups flour
½ tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 Cup brown sugar
1 Cup nuts (optional)
Mix these together in a bowl. Reserve ½ C. of this dry mixture

Beat together:
1 C. white sugar
2 eggs
1 C. oil – I used 3/4 C.
1 C. buttermilk*
1 tsp. soda

When mixed, add to the above mixture and put into a 9 x 13 inch prepared pan. Top with the reserved dry mixture. Dot with small pats of butter –about ¾ stick.

Bake for 40 minutes at 350 degrees.  Check before 40 minutes are up due to oven variance.

*For buttermilk substitute, pour 1 T. vinegar or lemon juice in a 1 C. measuring cup. Fill to the one cup mark with milk. Let set a few minutes.  I do this first and let it sit while making the cake.

 As you can see I used 3/4 C. of oil. I have made this for years, but next time, I am going to try to use 1/2 C. applesauce and 1/4 cup of oil instead of the 1 cup of oil that it is called for.
