Combine everything except the confectioners sugar, in a small bowl. Mix vigorously with a fork until dough forms around fork and cleans bowl. Measure one level Teaspoon of dough onto ungreased cookie sheet. Bake until lightly browned, about 12 minutes. Remove from cookie sheet and roll in confectioners sugar.  Cool on waxed paper.  Store in airtight container. May be frozen but will need another dusting of C.sugar before serving.  Yields, 45 to 50 cookies.
