Chocolate Waffle Truffles

2 squares unsweetened chocolate or 8 tbsp Cocoa and 1 tbsp oil
½ cup butter or Crisco
Stir until smooth and add:
2 eggs
¾ cup sugar
1 cup flour
1 tsp vanilla 

Drop by teaspoon on medium hot waffle iron that has been sprayed with Pam.  Bake 50 seconds then test, you don't want them to harden.  Remove and cool.  

Frosting:
1/8 cup Cocoa                                       1/4 tsp vanilla
1 cup powered sugar                             1/8 cup milk 

Spread a little frosting on top of each cookie.  You can top with pecans while frosting is warm if desired. 

I usually make a double batch.
