   Fiesta Soup

2 pounds ground beef
1 medium onion, chopped
1-2 cloves garlic, chopped
Salt & pepper to taste
3 cans Campbell's Minestrone Soup
2 cans Ranch Style Beans, drained & rinsed (chili beans)
1 can Ro-Tel with Green Chilies
4 cans water (or more- you will need to add more after this cooks for a while)
Mini shell macaroni (or pasta of your choice)
1 Tbsp chili powder (optional) (I do not use it)

Brown ground beef drain add onion and garlic, salt & pepper to taste.  Add soup, beans, Ro-Tel and water.  Add approx. 1/2 to 2/3 cup shell macaroni.  Let simmer over low to medium heat until soup is heated and macaroni is done.

This soup makes quite a bit and it freezes well without the macaroni -- the macaroni has a tendency to get mushy if you freeze it then reheat.
