Gazpacho
2 large tomatoes,
peeled
1 large cucumber, peeled and seeded
1 medium onion
1 medium bell pepper, seeded
2 cans (12 oz.) tomato juice (I used V-8)
1/4 c. olive oil
1/3 c. red wine vinegar
A few dashes Tabasco
1 1/2 tsp salt
A dash black pepper
Parsley, basil, oregano, rosemary, thyme to taste. I used only
parsley and basil)
Process veggies
and juice till chopped. Mix with oil, vinegar, and seasonings.
