Pumpkin Coffeecake

Preheat oven to 325F – Grease 13x9x2 cake pan
2 packages pound cake mix (16oz)
1 can Libby’s pumpkin (15oz)
4 tsp. pumpkin pie spice
4 eggs
2/3 cup water
2 tsp. baking soda 

Combine spice, cake mixes, and baking soda in a bowl.  Add pumpkin, water and eggs.  Beat on medium speed for 3 minutes. 

Spread half of the batter in a greased pan.  Sprinkle with half of streusel topping. Streusel recipe below.  Spread the remaining batter and top with the remaining streusel mix. 

Bake 50 – 55 minutes.  Serve warm or chilled.  Optional:  Serve with whipped topping such as Cool Whip or vanilla ice cream. 

Streusel Topping:
Combine ¾ cup packed brown sugar, ¾ of chopped nuts (your choice), ½ cup of all-purpose flour and cut in ½ cup of butter.
