   Southwest Salsa Salad

2 cans black beans rinsed and drained
2 cups corn - fresh, frozen or canned
2 cups tomatoes - chopped fresh or canned
1/4 c diced red bell pepper
1/4 c diced red onion
1/4 c diced pineapple
1/4 c sliced scallions
1 Tbsp chopped cilantro
1 jalapeno seeded and minced
4 Tbsp red wine vinegar
Juice from ˝ lime
3 Tbsp honey
1tsp salt or to taste
1 tsp pepper
A pinch of cumin

Mix ingredients, chill and serve.  Served at Snowflake Café.
